Peep Wagashi | ピープス(Peeps)の和菓子

These are Peep-shaped wagashi, which is Japanese confectionery. If you’re a fan of Asian desserts or desserts with taro, then these are definitely for you! They are really simple to make and look adorable when happily sitting at the dinner table. These can be stored in the fridge or at room temperature, and can be made a few days ahead of time if desired. These are made from potato, sugar and egg yolk, and taste like a sweet version of potatoes.

Ingredients (makes 12 peeps)
❤ 2 medium potatoes (400g total)
❤ 240g sugar
❤ 4 hard-boiled egg yolks
❤ 2 tbsp shiratamako rice flour
❤ 2 tsp sugar
❤ 2 tbsp water
❤ chocolate sprinkles

Directions
1. Peel the potatoes and wrap them in plastic wrap. Microwave them for 5-10 minutes until they are soft. Then place them in a bowl and mash them with a fork. Add 240g of sugar and mix together.
2. Pour this into a small pot and set to medium heat. Mix with a spatula until the potato begins to dry out. Pass the egg yolks through a sieve and mix well.
3. Place the shiratamako rice flour, 2 tsp sugar and water into a small microwaveable bowl and mix together. Cover with plastic wrap and microwave for 20 seconds. Mix again, cover again with plastic wrap and microwave for an additional 10 seconds. Then mix one more time. Add this to the potato mixture and mix well.
4. Cover the bowl with plastic wrap and microwave for 40 seconds. Mix once more, then turn the dough out onto a wet dish cloth, and allow it to cool until you can handle it without burning your hands.
5. Divide the dough into 12 pieces and shape into Peep shapes. Using a toothpick or a pair of tweezers, make 2 eye holes in each Peep, and insert a chocolate sprinkle into each hole.

ピープス形の和菓子です!タロイモが入ったデザートが好きな方にぴったりのデザートだと思います!作りやすくて、とてもかわいいです!室温、または冷蔵庫 で保存してOKで、1~2日に作って置きてもOKですよ!じゃがいも、砂糖とゆで卵の黄身で作られて、甘いじゃがいもの味がしています!

材料(12個分)
❤じゃがいも 400g
❤砂糖 240g
❤ゆで卵の黄身 4個分
❤白玉粉 大さじ2
❤砂糖 小さじ2
❤水 大さじ2
❤チョコレートのスプレー

作り方
①じゃがいもの皮をむき、ラップにする。柔らかくなるまで電子レンジで5~10分加熱する。ボウルに入れ、フォークでつぶす。砂糖240gを加え、練り混ぜる。
②中火にした少鍋に入れ、水分がとぶまでゴムペラで混ぜる。ゆで卵の黄身をざるでこしながら加え、よく混ぜる。
③耐熱性のボウルに白玉粉、砂糖小さじ2と水を入れ、混ぜる。ラップをかけ、電子レンジで20秒加熱し、混ぜる。もう一度ラップをかけ、更に10秒加熱し、練り混ぜる。じゃがいもが入ったに加え、よく混ぜる。
④ラップをかけ、電子レンジで40秒加熱する。もう一度練り混ぜ、ぬれぶきんの上に取り出し、粗熱を取る。
⑤12等分に分け、ピープス形にする。爪楊枝、またはピンセットでピープスの目のための穴を開け、チョコレートのスプレーを各穴に入れる。
