Carrot Mug Cakes | にんじんのマグケーキ

These will make your brunch table look like it’s sprouting carrots! These aren’t too sweet, and are like pancakes in a mug, so they would be very at home during Easter brunch! I’ve added carrot juice to the batter to give it a genuine, but delicate, carrot flavour. These take mere minutes to cook, so they’re definitely something that can quickly be whipped up while your guests are leisurely making their way to the table. Serving these with a dollop of plain yogurt (or even some maple syrup, maybe?) is both refreshing and delicious!

Ingredients (serves 4-5)
❤ 255g cake flour
❤ 140g sugar
❤ 2 pinches of salt
❤ 4 tbsp skim milk powder
❤ 4 tsp baking powder
❤ 2 scant tbsp cornstarch
❤ 4 eggs
❤ 6 tbsp vegetable oil
❤ 200ml carrot juice
❤ fresh curly parsley

Directions
1. Place all of the ingredients, except for the parsley, into a bowl and whisk everything together.
2. Pour this mixture about half way up 4-5 microwave-safe mugs, and then microwave them individually for 1 minute and 30 seconds, or until the cake has risen and is fluffy and airy.
3. Make a hole in the top of each cake with a bamboo skewer, and insert a few stems of fresh parsley to look like a carrot.

にんじんがテーブルに生えるみたいです!マグカップが入ったホットケーキみたいなレシピで、イースターのブランチにぴったりのレシピだと思います!キャ ロットジュースを加えると優しいにんじんの味がします。2分以内だけかかりますので、ブランチを食べる前に作られるほどはやいです。プレーンヨーグルト (メープルシロップもおいしいかなぁ~)をかけるととてもおいしくなります!

材料(4~5人分)
❤薄力粉 255g
❤砂糖 140g
❤塩 ひとつまみ(2つ)
❤スキムミルク 大さじ4
❤ベーキングパウダー 小さじ4
❤コーンスターチ 大さじ2弱
❤卵 4個
❤サラダ油 大さじ6
❤キャロットジュース 200ml
❤パセリー

作り方
①パセリー意外の材料をすべてボウルに入れ、混ぜる。
②耐熱性のマグカップに4~5分目くらいまで流し入れる。ケーキがフワフワになるまで、1つずつ電子レンジで1分30秒加熱する。
③各ケーキの表面に竹串で刺し、にんじんみたいに穴にパセリーを少々入れると完成です!
