Homemade Strawberry Scones | 手作りいちごのスコーン

These are not only delicious, but so cute too! These scones are packed full with fresh strawberries and then shaped into strawberry shapes! I served these with my Rilakkuma High Tea recipe that I made last week (recipe here), and they really made the whole table of goodies look so much cuter and sweeter. Before making these, I’d never made scones before, so I was a little bit intimidated, but they were so easy to make, so you don’t need to worry! Even if you don’t have much experience with baking, these aren’t scary to make at all! When kneading the dough together the first time, if you find that the dough is too dry, then wet your hands with some more cream, and continue kneading. I had to do that, and found that it really helped the dough come together.

Scones are best eaten with some jam and fresh cream, and I served mine with homemade strawberry jam! I posted a recipe for that same jam a few months ago (recipe here), so I’d definitely recommend trying it out, because it would complement the scones beautifully!

Ingredients (makes 16 scones)
❤ 4 cups all-purpose flour
❤ 2/3 cup sugar
❤ 4 ½ tsp baking powder
❤ zest from 1 lemon (about 2 tsp)
❤ 1 ½ tsp salt
❤ ½ tsp ground cinnamon
❤ ½ cup cold unsalted butter, cut into cubes
❤ 1 1/3 cup half and half cream (10% cream)
❤ pink food colouring
❤ 1 cup finely chopped strawberries
❤ 1 tbsp matcha green tea powder
❤ ¼ cup dark chocolate chips
❤ 1 egg, lightly beaten
❤ 4 tsp sugar

Directions
1. Mix together the flour, 2/3 cup of sugar, baking powder, lemon zest, salt and cinnamon in a bowl. Add the butter and mix together using a pastry blender, or by making a slicing motion with two butter knives. This will incorporate the butter and make the mixture crumbly. Then add the cream and mix together.
2. Knead the dough about 5 times on a lightly floured surface. Remove about 60g of dough and set aside. Add the pink food colouring and the strawberries to the larger mass of dough, and knead together another 5 times. Add the matcha green tea powder to the smaller piece of dough, and knead 5 times.
3. Divide the pink dough into 16 equal pieces, and shape them into strawberry shapes. Place them 2 inches apart on baking sheets lined with parchment paper. Use the green dough to make the leaves and stems of the strawberries, and stick them onto the pink scones. Stick the dark chocolate chips onto the scones to look like seeds, and then brush the scones with the beaten egg. Then evenly sprinkle the 4 tbsp of sugar on top of the scones.
4. Bake at 425F for 9-12 minutes, until the edges are golden brown.

おいしくて、かわいいスコーンです!いちごの味がして、いちごの形にもしました!リラックマのハイティーのレシピと食べて(レシピはこちらです)、 とてもかわいいハイティーでした!スコーンを作るのが初めてでしたが、意外に作りやすかったです!ベーキングが苦手でも、絶対に作れるレシピです!生地を 最初にこねる時に一つにまとめにくい場合、手を生クリームに濡れて、生地をこねるとまとめやすいなります!

材料(16個分)
❤小麦粉 4カップ
❤砂糖 カップ2/3
❤ベーキングパウダー 小さじ4.5
❤レモンの皮の小片 (レモン1個分、約小さじ2)
❤塩 小さじ1.5
❤シナモン 小さじ1/2
❤無塩バター(冷たい、角に切った) カップ1/2
❤生クリーム(乳脂肪分10%) カップ1 1/3
❤ ピンク色の食用色素
❤いちご(みじん切り) 1カップ
❤抹茶粉 大さじ1
❤ダークチョコチップ 1/4カップ
❤卵(割りほぐした) 1個
❤砂糖 小さじ4

作り方
①小麦粉、砂糖カップ2/3、ベーキングパウダー、レモンの皮の小片、塩とシナモンをボウルで混ぜ合わせる。バターを加え、ペーストリーブレンダー、またはナイフ2本で、混ぜる。 クリームを加え、混ぜる。
②小麦粉を少々まぶした調理台に生地を5回ぐらいこねる。生地60gを取る。大量の生地にピンク色の食用色素といちごを加え、あと5回ぐらいこねる。60gの生地に抹茶粉を加え、5回ぐらいこねる。
③ピンク色の生地を16等分に分け、いちごの形にする。クッキングシートをひいた天板に並ぶ。緑色の生地でいちごのヘタを作り、いちごにつける。種に見えるように、ダークチョコチップをスコーンにつけ、割りほぐした卵をスコーンに塗る。 その上に砂糖小さじ4を振る。
④218度のオーブンで9~12分焼く。
