Baked Potato Nests

These would be a lovely addition to your Easter brunch, and will welcome the Spring into your day!

Ingredients
❤7 small-medium half-baked potatoes
❤2 tsp dried chives
❤salt and pepper, to taste
❤cooking spray
❤36 hard-boiled quail eggs
❤blue food colouring
❤3/4 cup sour cream

Directions
Prep: Both the potatoes and quail eggs can be prepared the night before in advance. To achieve half-baked potatoes, bake the potatoes at 400F for an hour or less until they are almost cooked through, but are still slightly crunchy in the middle. Place these in the fridge and allow to cool overnight.
To boil the quail eggs, place the eggs in a pot of cold water, and bring to a boil. Boil for 3-4 minutes, then remove from the heat, and allow to sit in the water for 3 more minutes. Rinse them in cold water, then peel.

1. For a quick way to dye the eggs, pour about 1-2 tsp of blue food colouring in a glass, and fill halfway with water. Add the quail eggs, and wait about 30 seconds. Because of the large amount of food colouring, they’ll turn blue right away!
2. Peel the potatoes, and grate on the largest holes of a cheese grater. Mix together with the chives, salt and pepper. Spray a muffin tin with cooking spray, and spoon the potatoes inside. Fill the cups quite full, so that the base and the walls are quite thick, and the potatoes are spilling out over the cups. Spray once more with cooking spray, and bake at 425F for 20-30 minutes, until golden brown.
3. Allow them to slightly cool, then spoon in some sour cream and arrange 3 quail eggs inside each nest.

焼きいもの巣

材料
❤生焼けのじゃがいも(小中) 7個
❤チャイブ(フリーズドライ) 小さじ2
❤塩と胡椒 適量
❤クッキング・スプレー
❤固茹でうずら卵 36個
❤食用色素(青)
❤サワークリーム 3/4カップ

作り方
下準備:じゃがいもとうずら卵も前の夜に準備できます。生焼けのじゃがいもを焼きために、じゃがいもを204度のオーブンで1時間以下焼き、中はまだ少し硬いまで焼く。冷蔵庫に置き、一夜冷ます。
うずら卵を固茹でるために、卵を鍋に入れ、ひたひたの冷水を入れ、沸騰する。3~4茹で、火を止め、更に3分放置する。冷水にさらし、殻を剥く。

①卵を速く染めるために、グラスに青色の食用色素を小さじ1~2を流し込み、グラスの半分まで水を流し込む。うずら卵を加え、約30秒待つ。食用色素を大量加えたため、すぐ青色になります!❤
②じゃがいもの皮を剥き、チーズおろし器の一番大きいな穴におろす。チャイブ、塩と胡椒と混ぜ合わせる。マフィンの焼き型にクッキング・スプレーをかけ、じゃがいもを入れる。巣の「壁」を厚くし、じゃがいもをたっぷり入れ込む。マフィンの焼き型から零れているようになるまで入れ込む。もう一度クッキング・スプレーをかけ、218度のオーブンで焼き色が付くまで焼く、20~30分。
③少し冷ませ、巣の中にサワークリームを入れ込み、各巣にうずら卵を3個アレンジし、完成です❤
